Menu Tasting at Kendeja Posh Restaurant

On Saturday October 3rd, 2009, a selected group of people from the diplomatic, business and the press communities, were invited to a menu tasting event at the Posh Restaurant at kendeja Resort and Villas in Monrovia. Nine dishes were presented for tasting and evaluation.

The group was asked to evaluate the dishes based on 1. Presentation, 2. Suitable dish used, 3. Served at appropriate temperature, 4. Colour combination, 5. Fragrance, 6. Taste, and 7. Texture. Due to the number of dishes in the evaluation, portions were reduced to allow all the dishes to be sampled.

Some of the dishes in the evaluation included:

  • Seafood Pepper Soup - A familiar Liberian dish that is complemented with a citrus and coconut ice cream.
  • Beef with Tomato Salad - Beef encrusted with Liberian pepper and served in a red-hot pan until rare. Accompanied by a warm tomato salad and red wine
  • Herbed Goat Cutlet - Rib chops encrusted in herbs, served on grilled jalapeno and parmesan - polenta cake with a balsamic soaked vegetable minted.
  • Shredded Lamb - Braised boned leg of lamb wrapped in potato greens and phyllo pastry accompanied by plantain chips and rosemary apple.
  • Breast of Chicken - Supreme cuts stuffed with sundried tomatoes and baked in the oven and served with seasonal vegetables
  • Kendeja Corn Bread - Layered with custard, flavoured with orange and a hint of lime.
  • Liberian Coastal Desserts - A trio of chocolate tart, banana and plantain cake and coconut parfait served drizzled with a fresh papaya sauce.
  • Poppy Seed and Vanilla Pave - A square or layered sponge cake topped with lemond and a soft-baked meringue. Served with a fruit soup.
